noma Australia is an exciting three-part adventure that will document the creativity, inspiration and journey behind one of the most anticipated culinary events of 2016 – the opening of noma Australia at Barangaroo, Sydney.
With exclusive access, we will follow founder René Redzepi and his dynamic international team, as they create an original menu that reflects the unique and vibrant flavours of Australia. We will share the stories behind some of the dishes, and experience some of what has inspired the noma team in their travels throughout Sydney and across Australia.
In Episode One, René Redzepi arrives in Australia, and we are shown a glimpse of Barangaroo and the construction that will become the harbour side home of the ten-week noma Australia residency. We then follow René as he travels to outback Australia to visit one of the local indigenous communities that have hosted the noma team on their earlier research trips. We will showcase the beauty of the countryside, the people of the communities, and some of the native ingredients that may appear on the noma Australia menu.

HEAD CHEF - noma Australia
René Redzepi is the chef and co-owner of Noma in Copenhagen, Denmark. Since the establishment of the restaurant in 2003, Redzepi has developed a cuisine that draws from the area's landscape and culture. Using a wide yet intimate network of farmers, foragers, and other purveyors, Noma celebrates the region's ingredients and aims to present a kind of cooking that expresses its location and the seasons.
Redzepi is the author of Noma: Time and Place in Nordic Cuisine (Phaidon, 2010) and A Work in Progress (Phaidon, 2013).
In 2008, he founded the Nordic Food Lab, an independent, open-source research organization that studies deliciousness. And in 2011, he founded the MAD Symposium, an annual gathering of chefs and food lovers with an appetite for knowledge.
